  Smoked Turkey Roll-Ups These versatile smoked turkey roll-ups are perfect for eating out-of-hand at a picnic. Because tortillas are low in calories and fat they make a great healthy alternative to bread. You can make these roll-ups with the suggested smoked turkey, or you can substitute ham or any other favourite lunch meat. 1/2 cup (125 ml) low-fat mayonnaise 2 Tbsp. (25 ml) chopped fresh parsley or coriander 1 jalapeno pepper, seeded & minced to taste salt & fresh ground pepper 4 large (10-inch/25 cm) whole wheat tortillas 1/2 cup (125 ml) red onion, thinly sliced 8 oz. (250 g) smoked turkey, thinly sliced Combine the mayonnaise, parsley/coriander, mustard and minced jalapeno pepper in a small bowl. Add salt and pepper to taste. Spread each tortilla with a heaping spoon or two of mayonnaise mixture. Sprinkle with red onion. Arrange approx. 3 slices of turkey on each and roll up tightly.
