Smoked Turkey Roll-Ups
These versatile smoked turkey roll-ups are perfect for eating out-of-hand at a picnic. Because tortillas are low in calories and fat they make a great healthy alternative to bread. You can make these roll-ups with the suggested smoked turkey, or you can substitute ham or any other favourite lunch meat.
1/2 cup (125 ml) | low-fat mayonnaise |
2 Tbsp. (25 ml) | chopped fresh parsley or coriander |
1 | jalapeno pepper, seeded & minced |
to taste | salt & fresh ground pepper |
4 large | (10-inch/25 cm) whole wheat tortillas |
1/2 cup (125 ml) | red onion, thinly sliced |
8 oz. (250 g) | smoked turkey, thinly sliced |
Combine the mayonnaise, parsley/coriander, mustard and minced jalapeno pepper in a small bowl. Add salt and pepper to taste.
Spread each tortilla with a heaping spoon or two of mayonnaise mixture. Sprinkle with red onion. Arrange approx. 3 slices of turkey on each and roll up tightly.
These roll-ups may be made ahead, wrapped individually and refrigerated up to 24 hrs. They may be eaten as is, or for hor d'oeuvres cut into 1-inch pieces.
